sage and goat cheese make this roasted butternut squash pizza extra delicious. it's great in fall and winter with a simple salad for dinner.

years ago, two of my friends cooked a butternut squash pizza recipe out of a cookbook called the cook’s encyclopedia of vegetarian cooking and i was smitten. with the pizza and with the cookbook that contained this delicious recipe. i set about trying to buy a copy of the cookbook myself and was dismayed to find that it was out of print. luckily my aunt and her husband are book-finding super sleuths and soon i had my very own copy of the book. every recipe that i’ve tried in the cookbook since has been quite tasty.

several years ago, my husband and i backpacked through europe for several weeks and one of the cities that we visited was amsterdam. i should say now, i wasn’t really expecting to like amsterdam as i’m not much into… well, all of the things the city is known for. which meant, of course, that amsterdam ended up being one of my three favorites from the trip.

warm, mulled apple cider is just about the coziest fall beverage i can think of. and as a huge bonus, your home will smell AMAZING by the time you are sipping on a warm mugful of cider. i’ve tried a few different recipes and even a few premixed spice kits for making mulled apple cider over the years and this is the recipe i always come back to. it’s the recipe my friends always (very politely) request that i make. in fact, i’m not even sure why i try other recipes: this one is always delicious and it’s very simple to make.

grilled cheese with apple is the perfect fall lunch! fast and easy to assemble, it's deliciously savory with just a hint of sweet.

grilled cheese is easily one of my favorite weekend lunches. i try to always keep some good crusty bread in the freezer (presliced) and some cheese that melts nicely so that i can quickly throw together a sandwich based on whatever i have on hand.

when i was in college, grilled cheeses were one of my go to lunch items because the cafeteria had them everyday, they never ran out of them, and they were pretty good, in a terrible/greasy/diner food kind of way. cheap white bread, cheap american cheese, and an unholy amount of fat spread on the outsides of the bread. thank goodness the cafeteria didn’t post nutritional information…

green beans with shallots, pecorino, and basil

a delicious, quick, and healthy recipe for green beans with just 5 ingredients:  green beans, shallots, pecorino romano cheese, basil, and olive oil! simple to prepare but tastes very sophisticated.

it turns out that i love green beans. they are another entry in the category of “vegetables i thought i hated” (let me save you the suspense: when i was little (read: until sometime in college), i hated nearly every vegetable. even the really delicious ones!). i hasten to add, however, that even now, i only like green beans fresh. canned and frozen are wretched. but fresh. yum! also, kiiiiind of a pain to prep, cutting off all of those ends. which means that when i make green beans, i want them to be extra delicious.
